I would certainly not call myself a good cook, but Eric and I have managed to come up with a few good meals that we eat throughout the week. If I had my way, I would probably eat pizza, pasta or sushi every single night. Luckily for my body and my bank account, Eric brought some good eating habits to our marriage. We always seem to have a balanced dinner, including meat or fish, vegetables and a good starch. Butternut squash is our new, delicious side dish!
This recipe is pretty easy! All you need is:
– 1 package of cubed butternut squash
You can also buy a whole butternut squash and cube it yourself
– 2 tablespoons of olive oil
– 2 cloves of minced garlic
I just use a good sprinkle of garlic powder
– Sale and ground black pepper to taste
These need to be cooked in the oven at 400 degrees for about 25 – 30 minutes
Put the cubes into a mixing bowl and add all of the ingredients together and then mix well
Note: Make sure all of the cubes are a similar size, otherwise larger pieces won’t be fully cooked when you take these out.
I put some tin foil on a cookie sheet (for easy cleanup) and spread out the squash cubes evenly.
You’ll know these are done if they are a little bit soft when you eat them. This is a great side dish for steak, chicken or fish! That’s all these is to it!
