Hey Everyone!! I came across this great healthy banana pancake recipe and I decided that I had to share it this week. These are super easy to make and really really delicious! Check out the easy steps to make these guys!
With minimal burns!!
When I said this recipe was super easy, I wasn’t lying, all you will need are:
– 2 eggs
– 1 banana
– A pinch of cinnamon
– A pinch of baking powder
*One serving will feed about 2 people. For every banana you add, just add 2 eggs and extra pinches of cinnamon and baking powder
The first step is to mush up all of the bananas. I used a fork and mushed them up until they were a pudding-like consistency. I used 4 bananas because I was determined to make breakfast for Eric, my parents and my sister. I hope they like pancakes…and bananas…
The next step was to crack all of the eggs into a bowl and beat them. I used 8 eggs (2 eggs per every 1 banana).
I then added a few shakes of baking powder and cinnamon. I didn’t really measure these, but what you see in the picture below is pretty much what I added.
Now, I’m not going to lie to you. I tried making the pancakes with this recipe, but the consistency just wasn’t working. I needed something to thicken up the batter, so I added a little bit of pancake mix just to give the pancakes a nice, fluffy consistency. I used a measuring cup to make silver dollar sized pancakes.
These came out great and were super yummy! I added some blueberries, powdered sugar and syrup to finish these babies off!
